Eels and oysters
Long shiny eels wriggle through the quiet lagoon waters here, in particular Bages-Sigean. Oysters are cultivated in the Leucate lagoon and in the sea at Gruissan. The oysters of the Narbonne coast taste smooth and particularly Mediterranean. They are a mixture of sea and soil: salt-flavoured with a hint of rosemary and thyme.
